Pecan Muffins


 In my last post featuring a Master Floral Designer Program for my garden club I made the pecan muffins. I would love to share this good and very easy recipe with you. 


Recipe for Pecan Muffins

1 cup brown sugar, packed
2 cups pecans, chopped
2 eggs, beaten
1/2 cup  plain flour
2/3 butter, melted
Pecan halves for garnish

Combine brown sugar, flour and pecans; set aside. In a separate bowl, combine butter and eggs; stir into flour mixture. Fill greased and floured (Baker's Joy works great and so does Pam with flour) mini muffin pans; filling about 2/3 full. I placed a pecan half on top of each muffin. Bake at 350 for 15 minutes. Remove immediately from tins and cool on racks. Yield 2 1/2 dozen. I doubled the recipe because I wanted to have plenty and there were some left.

    These look yummy -- I'm glad you shared your recipe! I, too, noticed the sweet pansy in the center of the plate; what a pretty presentation. :)

    Did you get snow last night? We finally got some -- two inches at most, but it's still pretty. The sun's out today with a lovely blue sky, and everything just sparkles. Have a great weekend!

  7. They were delicious!! Thanks so much for sharing the recipe. We had a bumper crop of pecans this year, and the man who picked them up shelled them for us - for free - so I'm looking forward to baking some soon. Maxine
